Tarta de chocolate de The Faobulous Baker Brothers


Esta tarta de chocolate la vi en un nuevo programa de Canal Cocina, Los Fabulosos Hermanos Panaderos (The Fabulous Baker Brothers). Se puede comer con nata, helado de vainilla... es chocolate mézclalo con lo que mas te gusta : ). La recomiendo fresquita de la nevera.
 

La cantidad de ingredientes y la preparación son los de la receta original, yo preparé una tarta con la mitad de cantidades y sale para un molde de unos 15-20 cm de diámetro. Al final he puesto la receta original en inglés por si a alguien le apetece practicar ; ).


Ingredientes:

-  150 gr. de mantequilla.
-  250 gr. de chocolate en trozos.
-  125 gr. de azúcar glas.
-  5 huevos.
-  Pizca de sal.


Preparación:

Precalentar el horno a 180ºC.

Fundir el chocolate con la mantequilla a fuego lento en una cazuela o al baño maría*


*Si se tiene (mucho) tiempo se puede derretir el chocolate como en la receta original. En un recipiente metálico se dispone el chocolate y la mantequilla, se tapa con papel film y se coloca sobre una cazuela con agua sin que esta toque el cuenco. Dejar derretir al vapor sin remover.

Mientras el chocolate se enfría, separar las claras de las yemas.  Batir las yemas con el azúcar glas hasta obtener una mezcla que tenga un punto cremoso. Mezclar con el chocolate, este no debe estar caliente o las yemas se cocinarán.

En otro bol batir las claras con la sal hasta punto de nieve.



Poco a poco ir añadiendo las claras a la mezcla de chocolate y unir con movimientos envolventes para que la mezcla no pierda aire.

 
Verter la mezcla en un molde redondo de unos treinta centímetros de diámetro y hornear 30-40 minutos.





 Chocolate cake recipe: 

Ingredients:

-  250g butter
-  500g chocolate, broken into pieces
-  250g caster sugar
-  10 eggs separated


Method:

Preheat the oven to 180°C/gas mark 4. Over a gentle flame heat a pan of water until just simmering. Place the butter and chocolate in a metal bowl and cover with cling film, then place on the pan and let the steam melt the chocolate. It's important not to stir the mixture or let any moisture get to the chocolate or it may seize and go grainy. Once it's melted leave it to cool a little.

In an electric mixer beat the sugar and egg yolks until they are pale and fluffy. This will take about 10 minutes. Whilst on a slow speed pour in the cooled melted chocolate mixture, and continue to beat until smooth and glossy. If the chocolate is too hot it will cook the eggs.

In a clean bowl whisk the egg whites to stiff peaks - it's easier done in a mixer if you're not feeling hardcore. Using a metal spoon, gently fold the egg whites into the chocolate mixture. Add the whites in stages, this keep the mixture light and fluffy. Don't over mix or all the air will be lost.

Grease a 30cm/9 inch spring-form cake tin and spoon the mixture in. Bake for 30-40 minutes until set.
